INGREDIENTS : 125 g butter 140 g castor sugar 4 egg yolks 2 whole eggs 75 g flour 35 g polenta 50 g semolina 5 g baking powder 60 g ground almonds 30 g Euroberry Blueberry Pieces 30 g Euroberry Diced Dried Cranberries 30 g Euroberry Toasted Coconut


1. Preheat the oven to 170°C.
2. Using a mixing bowl, cream together the butter and castor sugar, then add the eggs and egg yolks.
3. In another bowl, mix together the flour, polenta, yellow semolina flour, baking powder, ground almonds, Euroberry Blueberry Pieces, Euroberry Diced Dried Cranberries and Euroberry Toasted Coconut.
4. Add the dry ingredients to the wet and mix well.
5. Butter and flour a 20 cm round cake tin.
6. Scrape the batter into the prepared tin and bake in the preheated oven for 40 minutes.
