PEACHY PUDDING

Ingredients:

  • For the batter:
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 2 tsps baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ½ cup milk
  • 3 cups FRÜT frozen peaches
  • For the topping:
  • 1 ½ cups water
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 tbsp butter
  • ¼ tsp nutmeg
  • Cream/ice cream to serve

Method:

  1. Preheat oven to 200°C
  2. In a large bowl, combine flour, sugar, baking powder, salt & cinnamon
  3. Stir in milk until just combined (careful not to overmix!) and fold in peaches
  4. Butter baking dish and pour in mixture
  5. For the topping, in a large saucepan, combine water, sugars, butter & nutmeg, bring to boil and stir to let sugars dissolve
  6. Pour over peach batter
  7. Bak
